Cluster Food & Beverage Manager Location:Lisbon, Portugal Portfolio:Multi-Property (4-Star Hotels)Position Summary: The Cluster Food & Beverage Manager is responsible for overseeing and optimizing all Food & Beverage (F&B) operations across multiple 4-star hotels within Portugal. The role ensures high service standards, strong financial performance, operational consistency, and innovative culinary and beverage offerings aligned with each propertys positioning and the Portuguese hospitality market. This position requires strong leadership, commercial acumen, operational expertise, and the ability to manage diverse teams across multiple locations.Key Responsibilities:1. Operational Oversight Supervise F&B operations across all properties within the cluster, including restaurants, bars, banqueting, room service, and events. Ensure service delivery meets 4-star standards and guest expectations. Standardize procedures and implement best practices across all outlets. Conduct regular site visits and operational audits.2. Financial Management Develop and manage F&B budgets for all properties within the cluster. Monitor KPIs such as food cost, beverage cost, labor cost, revenue per available seat hour (RevPASH), and gross operating profit (GOP). Identify cost-control opportunities without compromising quality. Drive revenue growth through menu engineering and up-selling strategies.3. Culinary & Beverage Strategy Collaborate with Executive Chefs to design innovative menus reflecting Portuguese gastronomy and international trends. Oversee beverage programs, including wine lists featuring Portuguese wines and signature cocktail concepts. Ensure consistent food quality, presentation, and portion control standards.4. Sales & Events Collaboration Work closely with Sales and Events teams to maximize revenue from conferences, banquets, weddings, and corporate functions. Support development of F&B packages tailored to different market segments (leisure, corporate, MICE). Enhance guest experience through themed events and seasonal promotions.5. Leadership & Talent Development Lead, mentor, and support F&B Managers and Executive Chefs across the cluster. Implement training programs to enhance service excellence and product knowledge. Ensure compliance with Portuguese labor laws and promote a positive workplace culture.6. Compliance & Quality Assurance Ensure compliance with Portuguese food safety and hygiene regulations (HACCP standards). Maintain health, safety, and sanitation standards across all properties. Oversee supplier contracts and procurement processes to ensure quality and cost efficiency.Qualifications & Experience: Degree or diploma in Hospitality Management, Culinary Arts, or Business Administration. Minimum5-7 years of progressive F&B management experience in 4-star or 5-star hotels. Experience managing multiple outlets or properties preferred. Strong financial acumen and cost-control expertise. Knowledge of Portuguese gastronomy, wine culture, and local supplier networks.
