Store/Purchase Manager – Loco OtroAbout the JobPURPOSE This position is responsible for managing end-to-end procurement and inventory operations for Loco Otro, ensuring the timely availability of quality ingredients, raw materials, and supplies to support seamless restaurant operations. The role focuses on vendor management, cost control, inventory accuracy, and compliance with food safety standards while aligning procurement with the culinary vision and business goals.REPORTS TO Operations Manager + Sr. Sous ChefINTERACTS WITH External: Vendors, Suppliers, Distributors, FSSAI Authorities, and Service ProvidersInternal: Kitchen Team, Bar Team, Finance, Operations, and Front-of-House TeamsKEY RESPONSIBILITIESDrive Operational ExcellenceOversee daily procurement of fresh produce, proteins, dry goods, raw materials, bar supplies and restaurant suppliesEnsure all items meet quality standards and are delivered on time to avoid service disruptionsMaintain organised storage systems adhering to FIFO/FEFO principles and FSSAI guidelinesConduct regular stock audits and reconcile inventory with usage and sales dataApplied LearningStay updated on seasonal ingredients, market pricing, and supplier capabilitiesSource specialty items and unique ingredients that align with the menu innovationIntroduce cost-saving measures and sustainable sourcing practicesTrain kitchen and bar staff on proper receiving, storage, and stock rotation proceduresVendor & Supplier ManagementBuild strong relationships with local farmers, specialty suppliers, and distributorsNegotiate favourable pricing, credit terms, and consistent supply agreementsEvaluate supplier performance on quality, reliability, pricing, and serviceMaintain an approved vendor database and explore backup sourcing optionsBusiness & Financial AcumenDevelop and manage monthly procurement budgets in coordination with Finance and Culinary teamsMonitor food and beverage cost percentages and identify wastage or inefficiencyGenerate monthly reports on spend analysis, inventory turnover, and cost-saving initiativesSupport menu costing and pricing decisions with accurate ingredient cost dataLeadership & CollaborationWork closely with the department managers to forecast requirements based on menu changes, bar trends and other eventsCoordinate with the Operations team to plan for events, seasonal menus, and promotional periodsLead purchasing policy implementation and process improvementsMentor junior store staff and uphold high standards of professionalism and integrityCompliance & Risk ManagementEnsure all procurement complies with FSSAI regulations and Loco Otro's internal policiesMaintain accurate records of invoices, delivery notes, contracts, and supplier documentation for audit readinessMonitor supplier certifications (FSSAI licenses, quality certifications, etc.)Identify supply chain risks and implement contingency plans to avoid shortagesHealth & Safety ResponsibilitiesEnsure all food and raw material deliveries meet hygiene and safety standardsMonitor proper storage conditions (temperature control, pest prevention, cleanliness)Work with suppliers to address safety concerns and ensure compliance with food safety protocolsConduct regular inspections of storage areas and equipment Job Requirements / Hiring ProfileQUALIFICATIONSDegree/Diploma in Hotel Management, Supply Chain, Business Administration, or related field (preferred) WORK EXPERIENCEMinimum 5–7 years of experience in restaurant procurement, inventory management, or F&B operations (preferred)Prior experience in contemporary cuisine, or food & bar forward restaurants (preferred)Strong knowledge of ingredient sourcing, vendor negotiation, and inventory systemsSKILLS & COMPETENCIESExcellent negotiation and vendor relationship managementStrong numerical and analytical skills for cost control and budgetingProficiency in inventory management software and MS ExcelUnderstanding of FSSAI regulations and food safety standards (preferred)Ability to work in a fast-paced, detail-oriented environmentStrong communication and cross-functional collaboration skillsApplications from hospitality and any other industry are welcome.Email your resume on or call on +91 9975309106
